My New Obsession: The Onion


I am starting to have a new problem, and that problem is caramelized onions.

A few days ago, I was laying in bed and all I could think about was waking up and making caramelized onions. So I had to find a vessel for those onions, and I decided on top of a burger. Fair enough, that makes a lot of sense. I woke up, I made a burger with caramelized onions and my need for onion was satisfied…

Until I was in bed a few nights later, I wanted more caramelized onions. So I was in bed and thought about a different way to add onions. So I decided to wake up and have a Swiss cheese and caramelized onions omelet. I normally just have my eggs over easy or scrambled with some cheese and hot sauce, so I was worried the onions were going to be too much for me, but boy, they were AMAZING. This omelet was so delicious, I instagrammed it; here is the picture.


I thought that this craving had started to be subsided, until again, I am in bed and thinking about onions AGAIN. So I wonder what food I have in my kitchen and what would I be able to add to these sweet golden brown delicious strips. The answer I came to?

…. Nothing. (Other than a sprinkle of bread crumbs and garlic)

I have fallen in love with onions this past week. Caramelized onions have climbed up to be one of my favorite foods because I think they are delicious and should be put on top of everything.

I like my onions to be very tender. I don’t like raw onions at all, but I love really cooked down caramelized onions. I’ve always loved French Onion Soup and Blooming Onions, but that’s really it. So to anyone doubting their love for the caramelized onion, to you I say to cook it yourself and to make it the way you think you will like it, and who knows, maybe you’ll be the one having dreams about food.
